No Excuses to skip breakfast now. Meal prep these for your week ahead! 6 egg whites 1 Cup Low fat Ricotta Cheese 1/2 Cup Low fat Mozzarella cheese Your Choice of Veggies, choose about 4 e.g Onion, zucchini, tomato, mushroom, spinach etc Mix Egg whites, riccotta well. Chop veggies nice and small and mix in with eggs and cheese.
Pour into muffin tins and top with mozzarella cheese.
Bake in the oven until brown :)
